Method
- Preheat oven to 425°F (220°C). Line a baking tray with parchment paper.
- Cut peeled carrots on the diagonal into 1.75-inch pieces. Halve thicker ends for even size.
- In a large bowl, toss carrots with brown sugar, melted butter, olive oil, garlic, salt, and pepper.
- Spread carrots on the tray in a single layer. Roast for 15 minutes.
- Toss carrots, then roast for another 10 minutes until edges are caramelized.
- Toss in glaze again. Garnish with parsley and serve warm.
Notes
Add ½ tsp cinnamon for warmth, or a pinch of cayenne for a spicy twist. Great for holidays or weeknight dinners. Works well with baby carrots or rainbow carrots too.
