Ingredients
  

  • 1 kg carrots, peeled
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 2 tbsp butter, melted
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Parsley, for garnish (optional)

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking tray with parchment paper.
  2. Cut peeled carrots on the diagonal into 1.75-inch pieces. Halve thicker ends for even size.
  3. In a large bowl, toss carrots with brown sugar, melted butter, olive oil, garlic, salt, and pepper.
  4. Spread carrots on the tray in a single layer. Roast for 15 minutes.
  5. Toss carrots, then roast for another 10 minutes until edges are caramelized.
  6. Toss in glaze again. Garnish with parsley and serve warm.

Notes

Add ½ tsp cinnamon for warmth, or a pinch of cayenne for a spicy twist. Great for holidays or weeknight dinners. Works well with baby carrots or rainbow carrots too.
