  • 1 whole Whole chicken (4-5 pounds) Choose a bird for optimal results.
  • 1/2 cup Brown sugar Dark brown sugar offers richer flavor.
  • 1/4 cup Soy sauce Can substitute with tamari for gluten-free.
  • 1/4 cup Apple cider vinegar White vinegar can work too.
  • 2 tablespoons Olive oil Any cooking oil can replace it.
  • 4 cloves Garlic, minced Fresh is ideal, but powdered is a quick alternative.
  • 1 teaspoon Ginger, grated Ground ginger can be used if fresh isn't available.
  • 1 teaspoon Salt Basic seasoning.
  • 1 teaspoon Pepper Basic seasoning.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together brown sugar, soy sauce, apple cider vinegar, olive oil, garlic, ginger, salt, and pepper to create the glaze.
  3. Place the chicken in a roasting pan and brush the glaze all over the chicken, making sure to get under the skin where possible.
Cooking
  1. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  2. Baste the chicken with the glaze every 20 minutes for extra flavor and caramelization.
  3. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  4. Garnish with fresh herbs if desired and serve.

Notes

Optional: Pair with roasted garlic mashed potatoes or a fresh salad. Store leftovers in an airtight container in the fridge for up to four days, adding broth to keep moist.
