For the Chicken
  • 4 pieces boneless skinless chicken breasts Provides a lean and protein-packed base.

Method
 

Preparation
  1. Stir together all bruschetta ingredients in a medium bowl and set aside.
  2. If desired, gently pour out excess liquid from the tomatoes after a few minutes.
  3. Heat 2 teaspoons of oil over medium heat until it shimmers.
  4. Generously season both sides of the chicken breasts with salt and pepper.
Cooking
  1. Gently place the chicken breasts in the skillet without overcrowding the pan.
  2. Cook the first side for 8 minutes without moving to achieve a golden brown crust.
  3. Carefully flip the chicken breasts and cook the second side for 2-4 minutes or until cooked through.
  4. Transfer the cooked chicken to a plate and let it rest for 5 minutes.
Serving
  1. Transfer the chicken to serving plates and top generously with the bruschetta mixture.

Notes

Use ripe tomatoes for the bruschetta mixture. Ensure the skillet is hot before adding chicken. Letting the chicken rest helps retain moisture.
