Method
For the Chicken
- Begin by seasoning the chicken breasts on both sides with McCormick Grill Mates® seasoning.
- In a large skillet, heat one tablespoon of olive oil over medium heat until shimmering.
- Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through.
- Remove and let rest before slicing.
For the Pasta
- In the same skillet, add 3 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
- Allow the butter to melt, then add minced garlic, stirring until fragrant.
- Add diced tomatoes and sauté for about 5 minutes, allowing the tomatoes to break down slightly.
- Stir in lemon zest, juice, and the extra seasoning.
- Combine cooked spaghetti with the sauce, mixing well to incorporate every strand.
- Add the sliced chicken and toss gently.
- Finish with fresh basil before serving.
Notes
Serve warm, topped with additional fresh basil and a drizzle of olive oil. Store leftovers in an airtight container in the fridge for up to three days. Can be frozen without sauce.
