Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts For a leaner choice, opt for turkey.
  • 2 tablespoons McCormick Grill Mates® Roasted Garlic & Herb Seasoning Any Italian herb blend works in a pinch.
  • 1 tablespoon Olive Oil Can be substituted with avocado oil.
For the Pasta
  • 3 tablespoons Olive Oil Critical for a luscious sauce base; melted butter can be used for added richness.
  • 2 tablespoons Unsalted Butter Can be substituted with ghee or vegan butter.
  • 2 cloves Garlic (minced) Garlic powder can be a substitute, but fresh is best.
  • 2 cups Diced Plum Tomatoes About 4 tomatoes; canned tomatoes are a good alternative.
  • 1 tablespoon Lemon Zest Lime zest can be used for a different flavor.
  • 1/2 pieces Lemon (juiced) Apple cider vinegar can be a substitute.
  • 1 tablespoon McCormick Grill Mates® Roasted Garlic & Herb Seasoning An additional punch of flavor.
  • 4 cups Homemade Spaghetti Store-bought pasta can also work.
  • 15 leaves Basil (Chiffonade) Any herb like parsley or arugula can work if basil isn't available.

Method
 

For the Chicken
  1. Begin by seasoning the chicken breasts on both sides with McCormick Grill Mates® seasoning.
  2. In a large skillet, heat one tablespoon of olive oil over medium heat until shimmering.
  3. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through.
  4. Remove and let rest before slicing.
For the Pasta
  1. In the same skillet, add 3 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
  2. Allow the butter to melt, then add minced garlic, stirring until fragrant.
  3. Add diced tomatoes and sauté for about 5 minutes, allowing the tomatoes to break down slightly.
  4. Stir in lemon zest, juice, and the extra seasoning.
  5. Combine cooked spaghetti with the sauce, mixing well to incorporate every strand.
  6. Add the sliced chicken and toss gently.
  7. Finish with fresh basil before serving.

Notes

Serve warm, topped with additional fresh basil and a drizzle of olive oil. Store leftovers in an airtight container in the fridge for up to three days. Can be frozen without sauce.
