Method
 

Preparing the Filling
  1. In a large non-stick skillet over medium-high heat, warm the avocado oil until shimmering.
  2. Add the chopped onion, carrots, celery, and salt to the skillet. Cook for 6 to 8 minutes, stirring often, until the vegetables are softened and fragrant.
  3. Stir in the cooked chicken, Frank’s Hot Sauce, and melted butter. Cook while stirring for about 2 minutes until everything is heated through.
Assembling the Burritos
  1. On a clean workspace, lay out the tortillas. Divide the cooked brown rice evenly among the tortillas.
  2. Spoon the chicken and vegetable mixture onto each tortilla and top with shredded cheese.
  3. Fold in the sides and roll up tightly, placing them seam side down.
Cooking the Burritos
  1. Lightly coat the same skillet with cooking spray and heat over medium-high. Place the burritos seam-side down and brown for about 2 minutes per side until golden.
  2. Slice the burritos in half and serve with Blue Cheese or Ranch dressing for dipping.

Notes

Avoid overstuffing the burritos to ensure they wrap easily. Browning adds flavor and texture; make sure the skillet is hot before adding the burritos. You can also utilize leftover veggies or other proteins for variations.
