  • 2 green onions, finely sliced Scallions can also work.

  • 1/2 teaspoon smoked paprika Regular paprika can substitute for milder flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a blender or food processor, blend cottage cheese and cream cheese until smooth.
  3. Transfer to a bowl and mix in yogurt, buffalo sauce, garlic powder, smoked paprika, salt, and pepper.
  4. Stir in the chicken, most of the cheddar and mozzarella, and green onions.
  5. Spread the mixture into a greased small baking dish. Top with remaining cheese.
  6. Bake for 20 to 25 minutes or until bubbly and lightly golden on top.
  7. Garnish with parsley or extra green onions and serve warm.

Notes

Don’t skip softening the cream cheese; it makes blending much easier. Overbaking can lead to dryness, so keep an eye on the oven. Always taste and adjust seasoning as needed. For added fun, create a snack bar with various dippers like celery sticks and tortilla chips for guests to mix and match. You can assemble the dip a day in advance and refrigerate without baking, just bake before serving.
