Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour Substitute whole wheat flour for a healthier option.
  • 1 tbsp Baking powder Ensure it’s fresh for best results.
  • 1 tsp Baking soda Can replace with additional baking powder if needed.
  • 1/2 tsp Salt Essential for balance.
Wet Ingredients
  • 2 large Egg yolks Use flaxseed for a vegan option.
  • 1/2 cup Melted butter Substitute with melted coconut oil for a dairy-free alternative.
  • 2 tbsp Sugar Replace with honey or coconut sugar for a different flavor.
  • 1 3/4 cups Buttermilk Mix milk with vinegar if you don't have buttermilk.
  • 1 tsp Vanilla extract Optional but recommended.
Egg Whites
  • 2 large Egg whites Whip until soft peaks form.

Method
 

Preparation
  1. Preheat the waffle maker on medium-high heat and the oven to 200°F (93°C). Place a wire rack on a baking sheet and set aside.
  2. In a large bowl, whisk the flour, baking powder, baking soda, and salt together. Set aside.
  3. In another large bowl, whisk the egg yolks, melted butter, and sugar together. Whisk in the buttermilk and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Some small lumps are OK.
  5. In a separate bowl, whip the egg whites on high speed until soft peaks form, about 3 minutes. Gently fold them into the batter.
Cooking
  1. Grease the preheated waffle maker. Pour about 1/3 cup of the batter into each well and close the lid. Cook for 4–5 minutes until crisp, following your waffle maker's instructions.
  2. Transfer the cooked waffles to the wire rack and keep warm in the preheated oven. Repeat with remaining batter.
Serving
  1. Serve immediately with butter and maple syrup or your choice of toppings.

Notes

Waffles are a blank canvas for breakfast creativity. Store leftover waffles in an airtight container in the refrigerator for up to three days. Freeze waffles with parchment paper between each for up to three months.
