Preparation
- In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
- Add chopped onion and minced garlic to the pot, and sauté until the onion becomes translucent.
Cooking
- Stir in the beef broth, tomato sauce, diced tomatoes, uncooked rice, cabbage, carrots, thyme, smoked paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for about 25-30 minutes or until the rice and cabbage are tender.
- Taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with chopped parsley before serving.
