Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Add chopped onion and minced garlic to the pot, and sauté until the onion becomes translucent.
Cooking
  1. Stir in the beef broth, tomato sauce, diced tomatoes, uncooked rice, cabbage, carrots, thyme, smoked paprika, salt, and pepper.
  2. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for about 25-30 minutes or until the rice and cabbage are tender.
  3. Taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with chopped parsley before serving.

Notes
