Ingredients

Main Ingredients
  • 1 lb Lean ground meat (turkey or beef) Adds protein
  • 2 cups Carrots, chopped Sweetness and crunch; can substitute with parsnips
  • 1 head Cabbage, shredded Green cabbage is classic, Napa works too
  • 4 cups Tomato broth Essential for flavor and warmth; vegetable broth is a lighter option
  • 1 large Onion, chopped Builds the base taste; shallots are a nice change
  • 3 cloves Garlic, minced Adds depth; garlic powder can be used
  • 1 cup Bell pepper, chopped Any colorful variety
  • 1 cup Rice (or quinoa for gluten-free) Adds heartiness
  • 1 cup Sour cream For serving; Greek yogurt provides a healthier alternative
  • 6 slices Crusty bread Perfect for dipping

Method

Preparation
  1. In a large pot, brown the ground meat over medium heat.
  2. Add chopped onion, garlic, and bell pepper; sauté until softened.
  3. Stir in chopped carrots and shredded cabbage.
  4. Add in the tomato broth and rice.
  5. Season with salt and pepper to taste.
  6. Bring to a boil, then reduce heat; let simmer for at least 30 minutes.
  7. Serve hot with a dollop of sour cream and a slice of crusty bread.

Notes

Allow the soup to simmer long enough for the flavors to meld beautifully. Experiment with different herbs like thyme or dill for extra flavor, and consider adding Worcestershire sauce for depth.
