Ingredients
  

Base Ingredients
  • 1 head Cabbage Use green or purple for color.
  • 1 medium Onion Shallots or leeks are excellent substitutes.
  • 2 medium Carrots Replace with parsnips for a unique twist.
  • 2 stalks Celery Fennel works well here as a substitute.
  • 2 cloves Garlic Garlic powder can be used in a pinch.
  • 1 can Diced Tomatoes Crushed tomatoes or tomato paste can be used.
  • 4 cups Vegetable Broth Chicken or beef broth adds richer flavor.
Seasoning Ingredients
  • 1 teaspoon Thyme Oregano or basil will also work.
  • to taste Salt Adjust to taste.
  • to taste Pepper Smoked paprika can add an interesting kick.
  • 2 tablespoons Olive Oil Avocado oil is a good alternative.

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté for 5-7 minutes until soft.
  3. Stir in garlic and cook for another minute.
Cooking
  1. Add cabbage, diced tomatoes, vegetable broth, thyme, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  3. Taste and adjust seasoning as needed before serving.

Notes

Serve warm, topped with fresh herbs or cheese. Can be paired with crusty bread or a side salad. Store leftovers in airtight containers in the fridge for up to four days, or freeze for up to three months.
