  • 1 teaspoon cayenne pepper Adjust based on heat tolerance.
  • 1 teaspoon paprika Smoked paprika adds even more depth.
  • 1 teaspoon thyme Rosemary is a solid substitution.
  • 4 cups vegetable broth Chicken broth can also work.
  • 2 leaves bay leaves Omit if needed.

Method
 

Preparation
  1. Soak red beans overnight in water to soften them and reduce cooking time.
  2. Drain and rinse the beans before cooking.
  3. In a pot, heat oil over medium heat and sauté onion, bell pepper, and celery until soft.
  4. Add minced garlic and cook for 1 minute to release its aromatic qualities.
Cooking
  1. Add soaked beans, vegetable broth, bay leaves, and spices to the pot.
  2. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
  3. Prepare rice according to package instructions.
  4. Serve beans over rice.

Notes

Let the beans simmer longer for richer flavors. Incorporate diced tomatoes for added acidity and depth. Serve garnished with chopped green onions or parsley.
