For the assembly
  • 24 pieces lady fingers Textural component that soaks up flavors while holding the layers together.
  • 1 cup cold coffee (brewed) - extra for dipping Enhances the coffee flavor throughout.
  • 2 tablespoons unsweetened dutch processed cocoa Used for dusting, adding a rich chocolatey finish.

Method
 

Preparation
  1. In a large bowl, beat together the sugar and egg until frothy, about 2-3 minutes.
  2. Once frothy, mix in the cold coffee, mascarpone cheese, and cold cream, continuing to blend until thickened.
  3. Pour the cold coffee into a large dish for dipping ladyfingers.
Assembling the Tiramisu
  1. Quickly dip the ladyfingers in the cold coffee, turning them just once to soak but not soggy.
  2. In an 8-inch baking dish, arrange a layer of soaked ladyfingers, then spread half of the filling over them.
  3. Add another layer of soaked ladyfingers followed by the remaining filling, smoothing it out.
Chilling and Serving
  1. Cover with plastic wrap and refrigerate for at least 3-4 hours or overnight for the best flavor infusion.
  2. Before serving, dust the top with cocoa powder or chocolate shavings for an elegant finish.
  3. Store covered in the refrigerator for up to 4-5 days, or freeze leftovers for up to a month.

Notes

For best outcome, use high-quality mascarpone cheese. Avoid over-soaking the ladyfingers, and allow ample chilling time to develop flavor.
