Preparation
- Slice the tomato into half-inch thick rounds and set aside.
- Slice fresh mozzarella into half-inch thick rounds and set aside.
- Slice the baguette in half lengthwise and place both halves cut side up on a flat surface.
- Optional: Preheat the broiler to High and position an oven rack 8 to 12 inches below the heating element.
- In a small mixing bowl, combine mayonnaise and pesto, and spread the mixture on the cut side of the bottom baguette half.
- Spoon olive oil over the cut side of the top baguette half, ensuring even distribution.
- Place tomato slices on the bottom baguette half, followed by fresh mozzarella slices.
- Sprinkle salt and freshly cracked black pepper over the mozzarella layer.
Cooking
- Optional: If desired, place the assembled sandwich halves on a baking sheet and broil for 2 to 3 minutes until the bread is lightly toasted and the mozzarella is slightly melted.
- Carefully remove from the broiler and drizzle balsamic glaze over the mozzarella layer.
- Place basil leaves evenly on top of the mozzarella, then cover with the top half of the baguette (cut side down).
Serving
- Slice the sandwich in half to create two 6-inch sandwiches.
- Serve with a dipping bowl of high-quality olive oil if desired.
