Preparation
  1. In a large bowl, combine the grated carrots and shredded apple.
  2. In a small bowl, whisk together the yogurt, apple cider vinegar, honey (or maple syrup), and seasoning to create the creamy dressing.
  3. Pour the dressing over the carrot and apple mixture and toss until everything is well coated.
  4. Serve immediately or let it chill in the fridge for 10 minutes before serving for the best flavor and texture.

Notes

Grate extra carrots and store in the fridge for later use. Not grating ingredients finely results in a less cohesive texture, so shred them well. Skipping the chilling time affects flavor. Experiment with different apples for varied flavor profiles. Double the batch for leftovers.
