Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.

  3. In another bowl, mix the granulated sugar, brown sugar, and oil until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the grated carrots and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. If using, fold in the chopped nuts.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
