Preparation
- Preheat the oven to 350°F (175°C). Grease an 8.5 x 4.5 inch loaf pan or line with parchment paper.
- In a mixing bowl, whisk together the flour, cinnamon, nutmeg, salt, baking powder, and baking soda.
- In another bowl, combine the sugar and vegetable oil, then whisk in the eggs one at a time until smooth.
- Stir in the sour cream and vanilla, blending everything until just combined.
- Gently fold in the dry ingredients and the grated carrots, being careful not to overmix.
Baking
- Pour the mixture into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan.
Frosting
- Beat the softened cream cheese, sugar, vanilla, and a pinch of salt until creamy and desired consistency.
- Spread the frosting over the cooled bread and dust with a little cinnamon if desired; slice and enjoy.
