Frosting Ingredients

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8.5 x 4.5 inch loaf pan or line with parchment paper.
  2. In a mixing bowl, whisk together the flour, cinnamon, nutmeg, salt, baking powder, and baking soda.
  3. In another bowl, combine the sugar and vegetable oil, then whisk in the eggs one at a time until smooth.
  4. Stir in the sour cream and vanilla, blending everything until just combined.
  5. Gently fold in the dry ingredients and the grated carrots, being careful not to overmix.
Baking
  1. Pour the mixture into the prepared loaf pan and smooth the top with a spatula.
  2. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan.
Frosting
  1. Beat the softened cream cheese, sugar, vanilla, and a pinch of salt until creamy and desired consistency.
  2. Spread the frosting over the cooled bread and dust with a little cinnamon if desired; slice and enjoy.

Notes

Ensure all ingredients are at room temperature for best results. For added texture, consider folding in raisins or chopped nuts into the batter.
