  • 1.5 pounds Lean Ground Beef Use lean ground beef for a healthier option.
  • 1 piece Red Bell Pepper, seeded, chopped
  • 1 piece Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2.5 cups Biscuit Mix, like Bisquick
  • 1 cup Water Adjust water as needed to form dough.
  • cooking spray Cooking Spray, like Pam For greasing the casserole dish.
  • 0.5 cups Sour Cream
  • 0.5 cups Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1.5 cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • 0.5 cups Salsa, mild

Method
 

Preparation
  1. Preheat the oven to 350℉.
  2. In a large skillet over medium-high heat, cook the ground beef, breaking it apart until no longer pink. Drain excess fat.
  3. In a medium mixing bowl, combine the biscuit mix with water to form a dough. Spray a 9 x 13” casserole dish with cooking spray, and press the dough into the bottom. Bake for 5-8 minutes until lightly set.
  4. Add the chopped onions and bell pepper to the skillet with ground beef and cook for 4 minutes.
  5. Stir in taco seasoning and remove from heat.
Assembly
  1. Spread the beef mixture evenly over the baked biscuit layer.
  2. In another bowl, mix sour cream, mayonnaise, drained green chiles, ¾ cup cheese, and garlic powder until smooth. Spread this over the beef layer.
  3. Spoon dollops of salsa over the top and sprinkle with remaining cheese.
Baking
  1. Bake uncovered for 30 minutes or until bubbling and golden.
  2. Let it rest for a few minutes before slicing to firm up the layers.
  3. Serve warm.

Notes

Cattle Drive Casserole is perfect for potlucks and can be made ahead of time. For variations, try using turkey instead of beef, or add black beans for extra protein.
