Ingredients
  

Main Ingredients
  • 2 cups raw cauliflower florets 200g; can use frozen if fresh isn't available.
  • 2 tsp minced garlic Fresh garlic is best but garlic powder can be used.
  • 1/2 tsp salt Experiment with different types of salt.
  • 2 tbsp butter or olive oil Can omit for a fat-free version.
  • 1 cup milk of choice Can use almond, oat, or coconut milk for dairy-free.
Optional Ingredients
  • 1/2 cup shredded mozzarella or nutritional yeast Nutritional yeast is a great dairy-free option.
  • 1/4 cup diced shallot or onion Can replace with onion powder.

Method
 

Preparation
  1. Put all ingredients into a medium pot and bring to a complete boil.
  2. Cover and simmer for 15 minutes or until the cauliflower is fall-apart tender.
  3. Pulverize with either an immersion or regular blender until the mixture is creamy and silky.
Serving Suggestions
  1. Serve over pasta, spaghetti squash, rice, or roasted vegetables.

Notes

This sauce thickens as it sits. Store leftovers in an airtight container for up to 3-4 days, or freeze in small containers for later use.
