  1. Begin by removing any leaves from the cauliflower and cutting it into even-sized florets, approximately 2 inches each.
  2. Place the florets in a steam basket over 1 inch of water in a large pot. Once boiling, cover and steam the cauliflower for 8 to 10 minutes until it’s very tender.
  3. Remove from heat and allow it to cool slightly.
  4. Drain well and transfer the steamed cauliflower into a food processor, adding in the butter, sour cream, heavy cream, salt, and pepper.
Blending
  1. Process on high until the mixture is smooth and creamy, which should take about 1 minute. If your food processor is too small, blend in batches, then combine everything in a large bowl.
