Ingredients

For the Casserole
  • 1 lb ground beef Turkey or chicken can be used as a leaner alternative.
  • 1 medium onion, diced Shallots are a great alternative.
  • 2 cloves garlic, minced Can swap for garlic powder (½ tsp).
  • 1 cup frozen mixed vegetables Fresh veggies work if you cut them uniformly.
  • 1 can (10.5 oz) cream of mushroom soup Use a homemade cream sauce for a healthier option.
  • ½ cup beef broth Substitute with vegetable broth for a lighter touch.
  • 1 tsp Worcestershire sauce Soy sauce can be a good alternative.
  • 1 tsp salt Essential seasoning.
  • ½ tsp black pepper Essential seasoning.
For the Biscuit Topping
  • 2 cups all-purpose flour Substitute with whole wheat for added nutrition.
  • 1 tbsp baking powder Helps the biscuits rise.
  • ½ tsp salt Essential for seasoning the biscuit topping.
  • ½ cup cold unsalted butter, cubed Margarine can be used as a replacement.
  • 1 cup shredded sharp cheddar cheese Feel free to use your favorite cheese.
  • ¾ cup milk Non-dairy milk is a good alternative.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the beef is no longer pink, about 5-7 minutes.
  3. Stir in the frozen mixed vegetables, cream of mushroom soup, beef broth, Worcestershire sauce, salt, and pepper. Cook for an additional 5 minutes until heated through.
  4. Transfer the beef mixture to a greased 9x13 inch baking dish.
Biscuit Topping
  1. In a separate bowl, whisk together the flour, baking powder, and salt for the biscuit topping.
  2. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese.
  3. Add the milk gradually, mixing until just combined.
  4. Drop spoonfuls of the biscuit dough over the beef mixture, covering it evenly.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through.
  2. Let cool for 5 minutes before serving.

Notes
