Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). This ensures a consistent cooking temperature.
  2. In a bowl, combine the cream cheese, mozzarella cheese, chopped spinach, garlic powder, onion powder, salt, and pepper until well combined. This should take about 2-3 minutes.
  3. Carefully cut a pocket in each chicken breast, being mindful not to cut all the way through. This will take around 5 minutes in total.
  4. Generously stuff each pocket with the cheese mixture. It’s okay if some spills out.
Cooking
  1. Heat olive oil in a skillet over medium heat. Sear each chicken breast for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through, reaching an internal temperature of 165°F.
  3. Let the chicken rest for a few minutes before serving to allow juices to redistribute.

Notes

Serve with a fresh green salad or roasted vegetables for a balanced meal. Consider storing leftovers in an airtight container for up to 3-4 days.
