Method
 

Preparation
  1. Preheat your grill to medium-high heat.
  2. Trim excess fat from the chicken breasts and pat them dry with paper towels.
  3. In a small bowl, mix together olive oil, garlic powder, onion powder, salt, and pepper.
  4. Brush the olive oil mixture onto both sides of the chicken breasts.
Cooking
  1. Place the chicken on the preheated grill and cook for about 6-7 minutes on one side.
  2. Flip the chicken and spoon salsa verde generously over the top.
  3. Place slices of pepper jack cheese over the salsa and close the grill lid.
  4. Continue cooking for another 6-7 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
Serving
  1. Remove the chicken from the grill and let it rest for a few minutes.
  2. Slice the chicken and serve warm with additional salsa verde if desired.

Notes

For best results, use a meat thermometer, marinate chicken for deeper flavor, and let it rest post-cooking. Store leftovers in an airtight container and freeze for longer storage.
