Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Heat a skillet on medium heat and add 2 tablespoons of butter along with the sliced onion. Allow them to caramelize and soften for about 8 minutes.
  3. Stir in the crushed garlic cloves and thyme sprigs with the onions. Cook for an additional 2 minutes.
  4. In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 15 minutes or until they are tender. Drain well.
Cooking
  1. Return the cauliflower to the pot, add the remaining 2 tablespoons of butter, cayenne pepper, and parmesan cheese. Season with salt and pepper, then mash or blend until smooth.
  2. Transfer the mashed cauliflower to a 9x13 inch baking dish, spreading it evenly. Top with shredded cheddar cheese, and bake for about 10 minutes, or until the cheese is fully melted and lightly browned.
  3. Remove the dish from the oven and sprinkle the caramelized onions mixture on top. Serve warm and enjoy!

Notes

Make this dish ahead of time and just reheat briefly in the oven before serving. For a creamier texture, consider adding a splash of milk or cream when mashing the cauliflower.
