  • 1 cup sugar snap peas Sweet and crisp, adds a refreshing contrast.
Legume
  • 1 can chickpeas (drained and rinsed) Provides a protein-packed base.
Oils and Seasonings
  • 1 Tbsp olive oil Enhances flavor and helps in roasting.
  • 1 spray olive oil cooking spray Lightly adds moisture without excess fat.
  • 2 Tbsp nutritional yeast Infuses a cheesy flavor without dairy.
  • 1 tsp kosher salt Essential for amplifying flavors.
  • 1/2 tsp freshly ground black pepper Adds warmth and depth to the flavor profile.
Garnish
  • 1 Tbsp fresh parsley Optional, brings brightness to the dish.

Method

Preparation
  1. Preheat the oven to 400°F and prepare a sheet pan lined with foil for easy cleanup.
  2. Add drained and rinsed chickpeas to the sheet pan, lightly spray with cooking spray, and bake for about 15 minutes until they start to crisp.
  3. Remove the sheet pan from the oven, blend in the broccoli florets and sugar snap peas, drizzle with olive oil, and sprinkle with nutritional yeast, salt, and pepper.
Roasting
  1. Place the pan back in the oven and roast for about 10 minutes, or until the broccoli reaches your desired tenderness.
  2. Optionally, garnish with fresh parsley before serving.
  3. Let everything sit for an additional 15 minutes for improved chickpea texture before enjoying.

Notes

Rinse and drain chickpeas well to enhance crispiness. Experiment with roasting times based on texture preferences. Allowing the dish to sit after roasting helps flavors meld.
