Assembly
  1. Take each tortilla and spread the mixture evenly over the top. Ensure you reach the edges for maximum flavor in every bite. This step should take about 5 minutes.
  2. Roll the tortillas tightly from one side to the other and slice into pinwheels, aiming for 1-inch slices for perfect bite-sized pieces. This should take around 5–7 minutes.
Serving
  1. Serve these pinwheels cold or warm them in the oven at 350°F until the cheese is melted, about 10–15 minutes. Keep an eye on them so they don’t overcook.

Notes

Not draining spinach well may result in soggy pinwheels. Choose good quality flour tortillas to avoid tearing. Taste the mixture before rolling for optimal flavor. These can be served with dips like ranch or zesty salsa.
