  • 2 cans (15 oz each) cannellini beans, drained and rinsed Substitute with navy or great northern beans if desired.
  • 2 cups cherry tomatoes, halved Grape tomatoes can work too.
  • 1 cup shredded mozzarella cheese Feel free to switch with any favorite cheese blend.
  • 1/2 cup grated Parmesan cheese Nutritional yeast works for a dairy-free option.
Flavor Ingredients
  • 3 cloves garlic, minced Garlic powder can substitute in a pinch.
  • 2 tablespoons olive oil Any other light oil will do.
  • 1 teaspoon dried oregano Fresh herbs can add a stronger flavor.
  • 1 teaspoon dried basil Fresh herbs can add a stronger flavor.
  • to taste salt and pepper Essential for flavor balance.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the drained white beans, halved cherry tomatoes, minced garlic, olive oil, oregano, basil, salt, and pepper. Mix well until evenly coated.
  3. Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.
Baking
  1. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  2. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  3. Remove from the oven and let it cool for 5 minutes before serving.

Notes

Use day-old bread crumbs sprinkled on top for additional crunch. Experiment with a mix of cheeses for a more complex flavor.
