Ingredients

Filling
  • 2 cups fresh or frozen cherries Choose ripe, juicy cherries for the best flavor; frozen works just as well in a pinch.
  • 1 cup sugar Sweetens the cherries for a delightful filling; you can reduce this to half if you prefer less sweetness.
  • 1 teaspoon vanilla extract Adds aromatic warmth; interchangeable with almond extract for a different twist.
Batter
  • 1 cup all-purpose flour Forms the structure of the cobbler; gluten-free flour can substitute for a gluten-free version.
  • 1 teaspoon baking powder Leavens the batter; ensure it’s fresh for proper rising.
  • 1/2 teaspoon salt Balances sweetness; Himalayan salt can be a nice touch.
  • 1 cup milk Creates a smooth batter; almond or oat milk can work as non-dairy alternatives.
  • 1/2 cup butter, melted Provides richness; coconut oil is a great substitute for a dairy-free option.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cherries, 1/2 cup of sugar, and vanilla extract until mixed well.
  3. Pour the cherry mixture into a greased baking dish.
  4. In another bowl, mix the flour, remaining sugar, baking powder, and salt.
  5. Gradually stir in the milk and melted butter until smooth.
  6. Pour the batter over the cherries in the baking dish.
Baking
  1. Bake for 30-35 minutes or until golden brown.
Serving
  1. Serve warm with vanilla ice cream for a touch of decadence.

Notes

Don’t overload the cherries; too many can lead to a soggy cobbler. Ensure your baking powder is fresh for proper rising. Adjust the sweetness to suit your taste and experiment with different fruits for a unique cobbler delight.
