Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to get it ready for baking.
  2. In a bowl, combine the rolled oats, flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  4. Beat in the egg and vanilla extract until the mixture is light and fluffy.
  5. Gradually add the dry ingredients to the wet mixture and mix until combined.
  6. Gently fold in the chocolate chips.
  7. Using a spoon, drop rounded tablespoons of dough onto a baking sheet, spaced about two inches apart.
Baking
  1. Bake for 10-12 minutes or until the edges turn golden brown.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra chewiness, refrigerate the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week.
