Method
 

Marinate the Chicken
  1. In a large bowl, mix the pineapple juice, adobo sauce, olive oil, chili powder, cumin, salt, and pepper. Add the chicken breast and coat well. Cover and let it marinate in the refrigerator for at least 30 minutes. If time allows, let it marinate overnight for deeper flavor.
Cook the Chicken
  1. Preheat your grill or stovetop skillet over medium heat. Once hot, add the marinated chicken and cook for about 5-7 minutes per side, or until fully cooked and juices run clear. Remove it from the heat and allow it to rest for 5 minutes before slicing.
Assemble the Bowls
  1. In a bowl, start with a base of cooked rice. Layer on the diced pineapple, sliced chicken, chopped cilantro, and red onion, creating a colorful and inviting meal.
Serve with Lime
  1. Garnish each bowl with lime wedges. A squeeze of lime right before eating will uplift the entire dish, making every bite a burst of flavor.
