Ingredients

Main Ingredients
  • 2 cups cooked chicken, shredded Your star ingredient; leftovers are perfect!
  • 1 can cream of chicken soup Provides creaminess; opt for a low-fat version if desired.
  • 1 cup chicken broth Adds moisture and depth; vegetable broth works well too.
  • 1 cup frozen mixed vegetables Adds color and nutrition; feel free to use fresh in-season veggies.
  • 1 teaspoon garlic powder Elevates flavor; fresh minced garlic could be a great alternative.
  • 1 teaspoon onion powder A must for savory depth; fresh onions are a worthy substitute.
  • 1 package refrigerated biscuit dough Flaky topping; homemade dough can replace store-bought as well.
  • to taste salt and pepper Essential for seasoning; customize to your preference.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the cooked chicken, cream of chicken soup, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper until combined.
  3. Pour the mixture into a greased casserole dish.
  4. Tear the biscuit dough into pieces and scatter over the top of the chicken mixture.
Baking
  1. Bake for 25-30 minutes or until the biscuits are golden brown and the casserole is bubbly.
  2. Let it cool slightly before serving.

Notes

Common mistakes: Over-baking the biscuits can make them tough. Ensure your chicken is well shredded for even distribution of flavor. For extra comfort, sprinkle shredded cheese over the biscuit layer before baking. Swap in leftover rotisserie chicken for even quicker preparation.
