  • 1 lb Ground chicken Go for organic when possible.
  • 2 cups Apples (peeled and diced) Try using Granny Smith for a tart twist.
  • 2 cloves Garlic (minced) Fresh garlic works best.
  • 1 small Onion (finely chopped) Shallots can also be a sweet substitute.
  • 1 tbsp Sage (dried or fresh) If fresh is unavailable, dried works just as well.
  • 1 tbsp Thyme (dried or fresh) Oregano can be an alternative.
  • 1 tsp Salt Adjust based on dietary needs.
  • 1 tsp Black pepper For a milder flavor, use white pepper.
  • 1/4 tsp Nutmeg Use it sparingly, as its flavor is potent.
  • 1/2 tsp Cinnamon Opt for Vietnamese cinnamon for a richer taste.
  • 2 tbsp Olive oil (for cooking) Avocado oil is a great substitute.

Method
 

Preparation
  1. In a large bowl, combine the ground chicken, diced apples, minced garlic, chopped onion, sage, thyme, salt, pepper, nutmeg, and cinnamon. Mix well until fully combined.
  2. Form the mixture into sausage-shaped links or patties.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Cook the sausages for about 5-7 minutes on each side, or until browned and cooked through.
  3. Serve hot.

Notes

For an indulgent breakfast, serve with scrambled eggs and roasted veggies. Experiment with spice levels by adding a pinch of cayenne or red pepper flakes. Store leftovers in an airtight container in the fridge for up to four days or freeze for three months.
