Preparation
- Prepare the chicken and vegetables. Add the chicken to a large stock pot with onion, celery, carrot, leek, and garlic. Cover with water.
- Top with parsley, thyme, bay leaf, and peppercorns.
- Bring to a boil, then reduce heat and simmer for 40-60 minutes, or until the chicken is cooked through.
- Remove chicken and shred meat; discard bones.
- Strain the broth and discard solids.
Cooking
- Heat oil in the pot. Sauté onion and bell peppers for 5-10 minutes.
- Add garlic, paprika, and sausage; cook for 30 seconds.
- Add rice and cook for 1 minute.
- Add reserved chicken stock and shredded chicken; stir.
- Bring to a boil, reduce heat, and cook for 30 minutes, stirring occasionally.
Serving
- Remove from heat and stir to separate rice. Adjust consistency with reserved chicken stock.
- Stir in fresh parsley and serve.
Notes
Allow chicken to cool slightly before shredding to retain moisture. Rinse rice thoroughly for fluffy texture. Adjust spices for preference and consistency.
