  1. Melt the butter in a large saucepan over medium-high heat until bubbly and fragrant.
  2. Sprinkle the flour into the pan, whisking it into the butter, and cook for 2-3 minutes until the mixture thickens and turns lightly golden.
  3. Slowly add the chicken or turkey broth while whisking continuously to remove lumps. Simmer for 2 minutes as the gravy begins to thicken.
  4. Add poultry seasoning, thyme, salt, and pepper. Continue to whisk and simmer until the gravy reaches your desired thickness, about 6-9 minutes.
  5. Taste and adjust seasoning as needed. Serve the gravy warm over your favorite dishes.
