Ingredients
  

  • 2 cups cooked chicken, shredded or grilled
  • 2 cups white or brown rice, cooked
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup chopped romaine lettuce
  • 1/3 cup sour cream or Greek yogurt
  • 1 lime, cut into wedges
  • 1/4 cup chopped cilantro

Equipment

Method
 

  1. Season cooked chicken with smoked paprika, cumin, and a pinch of salt. Warm in a skillet if cold.
  2. Warm rice and stir in fresh chopped cilantro and lime zest for extra flavor.
  3. Heat beans and corn in a small saucepan with cumin and garlic powder.
  4. Prep toppings: slice avocado, halve tomatoes, chop lettuce and cilantro.
  5. Layer warm rice in the bowl, followed by chicken, beans, corn, and toppings.
  6. Drizzle sour cream or yogurt over the top, add lime wedges, and sprinkle with cilantro.
