Preparation
- Preheat your oven to 400°F (200°C) for a crispy exterior on the chicken.
- Rub the chicken breasts on both sides with salt, pepper, garlic powder, and paprika.
Cooking
- Place the seasoned chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown and cooked through, reaching an internal temperature of 165°F.
- While the chicken is baking, combine the chopped romaine lettuce, grated Parmesan, and Caesar dressing in a large bowl. Toss gently until well coated.
Assembly
- Once cooked, remove the chicken from the oven and let it rest for a few minutes before slicing it into strips.
- Layer crispy chicken strips onto the bread, add a generous helping of the Caesar salad, drizzle with more dressing if desired, and top with the other slice of bread.
- Cut sandwiches in half to make them easier to handle and enjoy!
Notes
For a low-carb version, substitute the bread with large lettuce leaves. Store leftovers in an airtight container in the refrigerator for up to three days, keeping the salad separate to avoid sogginess. You can also freeze the assembled sandwiches for up to three months.
