Preparation
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, panko breadcrumbs, egg, feta, spinach, parsley, salt, garlic powder, onion powder, lemon juice, and lemon zest. Mix gently until just combined.
- Wash and dry your hands. Use 1-2 teaspoons of olive oil to coat your hands to prevent sticking.
- Form 16 meatballs, each about 2 inches in diameter, and place them on the prepared baking sheet.
Cooking
- Bake for 18-22 minutes, until the meatballs have browned and the internal temperature reaches at least 165°F.
Notes
Let the mix rest for 30 minutes before shaping for enhanced flavor. They can be served in pasta, salads, or as appetizers!
