  • 1 pound lean ground chicken or turkey for a lighter option.
  • 1/2 cup gluten-free panko breadcrumbs regular breadcrumbs can be used.
  • 1 piece egg use a flax egg for a vegan substitute.
  • 1/3 cup crumbled feta cheese about 2-3 ounces; goat cheese can be substituted.
  • 2 cups spinach, finely chopped or kale/swiss chard as substitutes.
  • 2 tablespoons finely chopped parsley replace with basil if desired.
  • 1/2 teaspoon kosher salt or sea salt.
  • 1/2 teaspoon garlic powder fresh garlic can be used for stronger flavor.
  • 1/2 teaspoon onion powder or finely chopped onions.
  • 1 1/2 tablespoons lemon juice lime juice can be a twist.
  • 1 teaspoon lemon zest to enhance freshness.

Method
 

Preparation
  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, egg, feta, spinach, parsley, salt, garlic powder, onion powder, lemon juice, and lemon zest. Mix gently until just combined.
  3. Wash and dry your hands. Use 1-2 teaspoons of olive oil to coat your hands to prevent sticking.
  4. Form 16 meatballs, each about 2 inches in diameter, and place them on the prepared baking sheet.
Cooking
  1. Bake for 18-22 minutes, until the meatballs have browned and the internal temperature reaches at least 165°F.

Notes

Let the mix rest for 30 minutes before shaping for enhanced flavor. They can be served in pasta, salads, or as appetizers!
