Ingredients

Main Ingredients
  • 1 lb Chicken Breast Substitute with turkey or tofu for a different twist.
  • 2 medium Bell Peppers Try green or yellow peppers for variety.
  • 1 medium Onion Sweet onions can give a nice caramelized taste.
  • 4 slices Provolone Cheese Mozzarella or cheddar works too.
  • 2 rolls Sausage Rolls or Hoagie Bread Gluten-free options are available.
Cooking Ingredients
  • 2 tbsp Olive Oil Feel free to replace with vegetable oil.
  • 1/4 tsp Garlic Powder Freshly minced garlic can replace this for more intensity.
  • 1 tsp Italian Seasoning Herbs like thyme or oregano are excellent substitutes.

Method

Preparation
  1. Season the chicken all over with salt, pepper, and ¼ tsp. garlic powder. Let the seasoned chicken rest at room temperature while you prepare the other ingredients.
  2. Thinly slice the bell peppers and onions. Set aside.
Cooking
  1. Heat one tablespoon of oil in a large skillet over medium heat. Cook the chicken for 3-4 minutes per side (until cooked through). Transfer the chicken to a cutting board and tent with foil.
  2. Add the remaining oil to the skillet. Add the bell peppers, onions, remaining garlic powder, Italian seasoning, and a pinch each of salt and pepper. Increase the heat to medium-high.
  3. Cook the vegetables until tender and slightly charred, about 6-8 minutes, then turn the heat down to medium.
  4. Thinly slice the chicken into strips. Stir the chicken into the pan with the vegetables.
  5. Divide the chicken and vegetable mixture into two separate piles in the pan. Cover each pile with provolone cheese and allow it to melt.
  6. Warm the sausage rolls in the microwave for about 20 seconds.
  7. Scoop one of the chicken and vegetable piles into a warm sausage roll. Repeat with the remaining sausage roll. Serve hot!

Notes

Overcooking the chicken can dry it out. Let the flavors meld for maximum taste. Serve warm with sweet potato fries or fresh salad.
