Ingredients

Main Ingredients
  • 12 oz cooked chicken, diced Any leftover roasted or rotisserie chicken works beautifully.
  • 2 spring onions, finely sliced Substitute with red onion or chives.
  • 3 oz Greek or plain yogurt Non-dairy yogurt is a great alternative.
  • 3 oz light mayonnaise Use vegan mayonnaise for a plant-based version.
  • 1.5 teaspoons Dijon mustard Any mustard variety will work.
  • 1/2 carrot, grated Try using colored carrots for a fun twist.
  • 1.5 oz baby spinach, roughly chopped Swap with kale or romaine if desired.
  • 1 oz sun-dried tomatoes, finely chopped Fresh tomatoes can substitute but won’t be as bold.
  • 1 rib celery, finely diced Red pepper can be a sweet alternative.
  • 1 zest of 1/2 lemon Lime can work equally well.
  • 1/2 juice of 1/2 lemon Apple cider vinegar is a tangy substitute.
  • 1 oz grated Parmesan cheese Omit for a dairy-free wrap.
  • 4 to 6 medium soft tortilla wraps Whole wheat or spinach wraps can add color and nutrients.

Method

Preparation
  1. Dice the cooked chicken and place it in a mixing bowl.
  2. Finely dice the celery, sun-dried tomatoes, and green onions.
  3. Grate the carrot, zest the lemon, and roughly chop the spinach.
  4. Add all ingredients to the bowl with the chicken.
  5. Mix everything together until well combined and creamy.
  6. Spoon about 1 to 1.5 cups of the mixture onto each tortilla and roll into a wrap.
  7. Enjoy as-is, or toast in a dry pan for a crispy, golden finish.

Notes

Avoid skipping the lemon juice; it is crucial for flavor balance. Ensure the ingredients are well mixed to achieve a uniform experience in every bite. For added crunch, include nuts like walnuts or almonds. Personalize the flavor by experimenting with fresh herbs like dill or parsley. Allow the mixture to chill before wrapping for an elevated flavor profile.
