Ingredients
  

  • 12 oz spaghetti
  • 3 cups cooked chicken, shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers
  • 1 can diced tomatoes (14 oz)
  • 4 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Boil spaghetti until al dente, drain and set aside.
  2. Sauté onion, garlic, and bell peppers in olive oil until soft.
  3. Add diced tomatoes and cream cheese, stirring until creamy.
  4. Fold in shredded chicken and season with salt and pepper.
  5. Toss in cooked spaghetti until well coated.
  6. Transfer to a baking dish, top with cheddar cheese, and bake at 350°F for 20 minutes until bubbly.
