Ingredients

Noodles
  • 8 ounces egg noodles or rice noodles Rice noodles are a great gluten-free option.
Chicken
  • 1 pound boneless, skinless chicken breasts, sliced Can replace with tofu for a vegetarian dish.
Vegetables
  • 1 cup bell peppers (red, yellow, or green), sliced Adds color and crunch; you can use zucchini instead based on preference.
  • 1 cup broccoli florets Nutrient-rich; snap peas can be an alternative for sweetness.
  • 1 medium carrot, julienned A nice sweetness; frozen carrots are also usable.
  • 3 pieces green onions, sliced For garnish and flavor; shallots offer a similar profile.
  • 1/4 cup sesame seeds (optional) Crunchy topping; omit if allergic, or try sunflower seeds.
Sauce
  • 1/2 cup soy sauce (or tamari for gluten-free) The heart of the sauce; coconut aminos are a healthier alternative.
  • 1/4 cup honey or maple syrup Sweetens the dish naturally; agave syrup can work too.
  • 2 tablespoons rice vinegar Adds acidity; apple cider vinegar is another great option.
  • 2 teaspoons cornstarch mixed with 2 tablespoons water Thickening agent; arrowroot powder is a suitable substitute.
  • 1 teaspoon garlic, minced Essential flavor; garlic powder can also suffice.
  • 1 teaspoon ginger, minced Adds warmth; ground ginger can be used in a pinch.
