  • 1 teaspoon oregano Feel free to swap with dried thyme for a different flavor profile.
  • 1 teaspoon cumin Coriander can be used if you prefer a subtler taste.
  • to taste salt and pepper Essential for seasoning; add more for personal preference.
  • tortillas for serving soft corn or flour tortillas Lettuce wraps can make it gluten-free.
  • to taste sour cream, avocado, or cheese for topping Greek yogurt is a healthy alternative.

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the chicken breasts, diced tomatoes, chipotle peppers, oregano, cumin, salt, and pepper.
  3. Pour in enough water to cover the chicken. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks.
  5. Return the shredded chicken to the pot and let it simmer in the sauce for another 10-15 minutes.
  6. Serve warm in tortillas and add toppings as desired.

Notes

For added smokiness, feel free to roast the tomatoes before adding them. If you prepare the Chicken Tinga ahead of time, let the flavors meld overnight for a truly irresistible dish. Customize the spice level according to your family’s preference—experimenting with various peppers can yield delightful results.
