- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chicken breasts, diced tomatoes, chipotle peppers, oregano, cumin, salt, and pepper.
- Pour in enough water to cover the chicken. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot and let it simmer in the sauce for another 10-15 minutes.
- Serve warm in tortillas and add toppings as desired.
