  • 2 medium Carrots Adds natural sweetness; parsnips or celery can replace them.
  • 2 stalks Celery Crunchy texture; green beans are a quick alternative.
  • 1 medium Onion Builds depth of flavor; shallots are a great substitute.
  • 3 cloves Garlic Aromatic goodness; garlic powder can be used for convenience.
  • 1 tbsp Italian herbs Robust flavor; fresh herbs add brightness.
  • 1 ts Salt Essential seasoning; consider garlic salt for extra flavor.
  • 1 ts Pepper Essential seasoning.
  • 2 cups Tortellini Soft and filling; any pasta shape can be used in a pinch.

Method
 

Preparation
  1. In a slow cooker, combine the chicken breasts, chicken broth, water, carrots, celery, onion, garlic, Italian herbs, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 4 hours until the chicken is cooked through.
  3. Remove the chicken and shred it using two forks.
  4. Return the shredded chicken to the slow cooker and stir in the tortellini.
  5. Cook for an additional 30 minutes on low or until the tortellini is tender.
  6. Serve hot, garnished with fresh parsley.

Notes

Serve warm with crusty bread or a garden salad. Store leftovers in airtight containers in the refrigerator for up to three days. Can freeze for up to three months.
