- In a slow cooker, combine the chicken breasts, chicken broth, water, carrots, celery, onion, garlic, Italian herbs, salt, and pepper.
- Cook on low for 6-8 hours or high for 4 hours until the chicken is cooked through.
- Remove the chicken and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir in the tortellini.
- Cook for an additional 30 minutes on low or until the tortellini is tender.
- Serve hot, garnished with fresh parsley.
Notes
Serve warm with crusty bread or a garden salad. Store leftovers in airtight containers in the refrigerator for up to three days. Can freeze for up to three months.
