Ingredients
  

Main Ingredients
  • 1 15-ounce can chickpeas, rinsed and drained Substituting with cooked dried chickpeas works too.
  • 1 whole avocado, pitted and diced Alternatively, use diced cucumber.
  • 4 ounces feta cheese, crumbled Can be swapped with goat cheese or nutritional yeast.
  • 1/2 cup red onion, thinly sliced Green onions may be used for a milder taste.
  • 1/2 cup fresh parsley, chopped Cilantro can be used for a bold flavor.
  • 1/4 cup fresh mint, chopped Can be omitted if not preferred.
Dressing
  • 3 tablespoons olive oil Avocado oil can be used as an alternative.
  • 2 tablespoons lemon juice, freshly squeezed Lime juice can be used in a pinch.
  • 1 clove garlic, minced Garlic powder can substitute but fresh is recommended.
  • 1/2 teaspoon dried oregano Thyme may be a good alternative.
  • Salt and pepper to taste Essential for seasoning.

Method
 

Preparation
  1. In a large bowl, combine the drained chickpeas, diced avocado, crumbled feta cheese, thinly sliced red onion, chopped parsley, and chopped mint.
Making the Dressing
  1. In a small bowl or jar, whisk together olive oil, fresh lemon juice, minced garlic, and dried oregano. Season with salt and pepper.
Combining
  1. Pour the dressing over the salad ingredients. Gently toss until well coated.
  2. Serve immediately or chill for later.

Notes

Avoid overmixing to prevent mushy ingredients. Letting the salad sit for 10-15 minutes can enhance flavors.
