Preparation
  1. Rinse and drain the chickpeas thoroughly, then mash them roughly in a bowl.
  2. Chop the celery, red onion, and carrots into small, even pieces.
  3. Combine the mashed chickpeas and chopped vegetables in a bowl. Add Dijon mustard, Greek yogurt, lemon juice, salt, and pepper. Mix well and adjust seasoning to taste.
  4. Spread the chickpea salad mixture evenly onto slices of bread. Optionally, add fresh greens.
  5. Cut the sandwiches in half and serve, either chilled or at room temperature.

Notes

For added flavor, consider including fresh herbs or adjusting seasonings. Store the chickpea salad filling separately from the bread to maintain freshness.
