Noodles
  • 12 ounces Asian-style noodles These can be ramen or rice noodles for gluten-free option.
Sauce
  • 1 tablespoon Korean chili pepper flakes (gochugaru) The key to heat; adjust for spice level with red pepper flakes.
  • 2 tablespoons Sugar Balances out the saltiness.
  • 1/4 cup Low-sodium soy sauce Keeps the dish flavorful without overwhelming saltiness.
  • 1/4 cup Oyster sauce Adds umami depth.
  • 1/4 cup Mirin Gently sweetens the dish.
  • 2 teaspoons Dark soy sauce For a richer color and flavor.
Main Ingredients
  • 2 tablespoons Peanut oil High-smoke point oil; can use vegetable or canola oil.
  • 1 pound Ground beef Can substitute with ground turkey or plant-based alternatives.
  • 1/2 medium Onion, sliced Adds sweetness; shallots can substitute.
  • 5 Green onions, divided Use both green and white parts.
  • 3 cloves Garlic, minced Essential for an aromatic base.
  • 1 teaspoon Fresh ginger, grated Provides warmth and freshness.
  • 1 tablespoon Sesame oil, toasted Rounds out the flavors; do not skip!

Method
 

Preparation
  1. Prepare the noodles according to package instructions. Drain and rinse under cold water, then set aside.
  2. In a small bowl, whisk together the Korean chili pepper flakes, sugar, soy sauce, oyster sauce, mirin, and dark soy sauce until well combined.
Cooking
  1. Heat the peanut oil in a large wok or skillet over medium-high heat.
  2. Once the oil is hot, add the ground beef and let it sit for about five minutes without stirring to promote a char.
  3. Flip the beef and break it up with a spatula, tossing it around.
  4. Add in the sliced onion, the white parts of the green onions, minced garlic, and grated ginger. Cook for another one to two minutes until fragrant.
  5. Toss the cooked noodles into the wok and stir everything together.
  6. Pour in the previously prepared sauce and mix well to coat all ingredients.
  7. Stir-fry everything together for an additional two minutes.
  8. Turn off the heat, drizzle with sesame oil, and stir again. Serve hot.

Notes

This dish can be easily customized with different proteins and vegetables. Enjoy topped with sesame seeds or sriracha for an extra kick.
