Preparation
  1. Chop and prepare all vegetables and chicken. Start by cutting the chicken breasts into bite-sized pieces. Season them with a bit of salt and pepper. Chop up all the veggies, except for the edamame, and set everything aside.
Cooking
  1. Heat a skillet. Preheat a skillet on medium heat and add about a tablespoon of olive oil. Wait until the oil shimmers to add your veggies.
  2. Sauté vegetables. Throw the prepared veggies into the skillet and sauté for about 3 minutes, or until they start to soften but still retain some crunch.
  3. Add chicken and sauces. Add the seasoned chicken pieces to the skillet along with the light soy sauce, lemon juice, and red pepper flakes. Cook everything together for about 15 minutes until the chicken is thoroughly cooked, and the flavors meld beautifully.
