Main Ingredients
  • 2 large ripe avocados Provides creaminess and healthy fats.
  • 1 cup thick white coconut cream Adds richness and a subtle coconut flavor.
  • 1/4 cup maple syrup or agave nectar Natural sweetener that complements the chocolate.
  • 1 small banana Contributes to sweetness and creamy texture.
  • 1/2 cup unsweetened cocoa/cacao powder Gives the rich chocolate flavor.
  • 1/4 cup cacao nibs or chocolate chips Optional for added crunch and a chocolatey bite.

Method

Preparation
  1. STEP 1: Prepare the food processor. Add the avocado and coconut cream to your food processor and pulse together until well incorporated.
  2. STEP 2: Add the remaining ingredients. Include the maple syrup, banana, and cocoa powder, then blend until combined, about 15 to 30 seconds.
  3. STEP 3: Incorporate cacao nibs. If desired, add the cacao nibs or chocolate chips and blend again until mixed throughout.
  4. STEP 4: Portion the pudding. Scoop the pudding into a single container or divide it among 3 to 4 mini containers.
  5. STEP 5: Cover to prevent condensation. Cover the top with saran wrap, pressing it down against the pudding to avoid condensation forming on the surface.
  6. STEP 6: Chill to set. Place the pudding in your fridge for at least 3 hours to allow it to set properly.
  7. STEP 7: Garnish before serving. Garnish with a mint leaf, a dollop of coconut whipped cream, and a sprinkling of cocoa powder before enjoying!

Notes

Ensure your avocado is perfectly ripe for the best flavor and texture. Chill overnight for enhanced flavor melding. Consider adding a splash of vanilla extract for additional flavor.
