Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) or 160°C for a fan oven.
  2. Line a cookie sheet with parchment paper or a silicone mat.
  3. In a stand mixer, beat the softened butter and sugar until smooth and creamy (2-3 minutes).
  4. Add eggs, one at a time, mixing well after each, then add vanilla.
  5. Gradually mix in flour, baking soda, and salt until just combined.
  6. Fold in chocolate chips gently using a spatula.
Baking
  1. Use a small scoop to portion the dough on the lined cookie sheet.
  2. Top each cookie with 3-4 additional chocolate chips if desired.
  3. Bake for 8-10 minutes or until edges begin to brown.
  4. Allow to cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. Consider browning the butter for richer flavor, and monitor baking time closely to avoid overbaking.
