Preparation
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, beat the egg until light and fluffy, then add the milk and melted butter. Stir to combine.
- Pour the wet ingredients into the dry ingredients and mix lightly until just moistened; avoid overmixing.
- Fold in chocolate chips.
- Let the batter rest for about 5 minutes.
Cooking
- Heat a non-stick skillet over medium-low heat and melt about ½ tablespoon of butter.
- Ladle ¼ cup of batter into the skillet, cooking 3-4 pancakes at a time until bubbles form on the surface, then flip and brown the other side.
- Repeat with remaining batter, adding more butter as needed.
Notes
Keep your heat on medium-low for evenly cooked pancakes. For added flavor, consider incorporating vanilla extract.
