Ingredients

  • 1 ½ cups all-purpose flour Whole wheat flour can also be used.
  • 1 Tablespoon baking powder Ensures fluffy pancakes.
  • 2 Tablespoons sugar Honey or maple syrup can be used for deeper flavor.
  • ¾ teaspoon salt A pinch is enough for flavor enhancement.
Wet Ingredients
  • 1 ¼ cups milk Almond or oat milk for dairy-free option.
  • 2 Tablespoons melted butter Coconut oil is a great substitute for dairy-free.
Add-Ins
  • 1 cup chocolate chips Semi-sweet or dark for indulgence; nuts are also a great option.
  • 3 Tablespoons butter for greasing the pan Oil can also be used.

Method
 

Preparation
  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. In another bowl, beat the egg until light and fluffy, then add the milk and melted butter. Stir to combine.
  3. Pour the wet ingredients into the dry ingredients and mix lightly until just moistened; avoid overmixing.
  4. Fold in chocolate chips.
  5. Let the batter rest for about 5 minutes.
Cooking
  1. Heat a non-stick skillet over medium-low heat and melt about ½ tablespoon of butter.
  2. Ladle ¼ cup of batter into the skillet, cooking 3-4 pancakes at a time until bubbles form on the surface, then flip and brown the other side.
  3. Repeat with remaining batter, adding more butter as needed.

Notes

Keep your heat on medium-low for evenly cooked pancakes. For added flavor, consider incorporating vanilla extract.
