Preparation

  3. Stir in grated zucchini.
  4. In another bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring until just combined.
  6. Gently fold in the chocolate chips.
  7. Pour batter into the prepared loaf pan, smoothing the top.
Baking
  1. Bake for 45-55 minutes or until a toothpick comes out clean.

Notes

Grate zucchini ahead of time and store in the refrigerator for convenience. This bread can be served warm or at room temperature and pairs well with cream cheese or butter. It is also freezer friendly.
